Great Salad Recipe For Ramadan

In Ramadan you need to eat healthy and eat your veggies, so bring color and nutrition to you table with this refreshing and nutritious salad.

For the Cantaloupe and Spinach salad you will need:

– 4 cups of fresh spinach leaves
– 1 cup of sliced cantaloupe
– 1 cup of sliced avocado
– 1/2 cup of diced red bell pepper
– 2 tablespoons of freshly chopped mint leaves
– 1 tablespoon of apple jam
– 1 & 1/2 teaspoons of white vinegar
– 3 tablespoons of Vegetable oil
– 1 minced clove of garlic

So to begin with, make sure you rinse all the greens before you start chopping!

Divide the spinach into 2 serving plates and then arrange half of the cantaloupe and the avocado in a circular pattern over the spinach on each plate. Sprinkle with diced red bell pepper and fresh mint.

And for the last step, mix the mint jelly with the white vinegar, oil and garlic and then drizzle over the salad and Serve!

This salad is wonderfully refreshing and a great summer dish while cantaloupe are in full swing.
